Worldly and Wise – meet Nacho Castells Rusinol. After many years slicing, dicing and enticing as head chef in the bustling kitchens of Barcelona and Spain, Nacho now finds himself crafting Australia’s favourite flavours to perfection.

Having worked across the globe, landing himself many prestigious awards, Nacho has a culinary knowledge akin to the quantity of garlic he’s consumed (okay, maybe not quite). Suffice to say, Nacho has a wealth of experience when it comes to producing a menu that will enrapture your taste buds.

Nacho’s creative approach veers away from traditional European influences. He is passionate about applying techniques that respect the organic product, flavour and season, rather than complicating the dish with too many ingredients.

Throughout his career, Nacho has mastered an array of delicious recipes that epitomise a high-quality dining experience, but you simply can’t go wrong with his signature dish – slow cooked beef cheeks, roasted sweet potato purée, pickled grapes and wild mushroom sauce (a winner all-year round).

Born with a love of “cibo e vino” (and rarely spotted without the latter), Italian raised Giordano has had a passion for wine since he began work on his Aunt’s Carignan vineyard at a young age.

Since then, Giordano has worked at world-class resorts across the globe, giving him exposure to an array of incredible cultures, customers and produce that have contributed to shaping his palate and hospitality outlook that prioritises the guest experiences and exceeds expectations.

Giordano is our head sommelier, and boy does he know how to orchestrate a match made in heaven between (but not limited to) our food and wine.

Giordano brings both a curated and worldly range to the patron, whilst highlighting local producers.

Feel the taste

Forget food and drinks for a second – Cafe de Hayley’s setup is such a vibe you’ll likely go there just to enjoy its Instagram-worthy ambience. Its artsy decor against white brick walls and ceiling floral arrangement is a welcoming sight, along with an outdoor deck area to enjoy the best of Sydney’s weather. Besides good coffee, the cafe’s all-day breakfast and lunch menu has the usual suspects like Eggs Benedict, Smashed Avo, French Toast, Seafood Pasta and Chicken Risotto. Just make sure to book ahead to avoid any disappointment.
